Local small holders, members of the not for profit co-op, are dedicated to rearing livestock in harmony with the environment.
The vision is to promote local produce via a comprehensive online presence which differentiates itself from other online farmer/butchers. To achieve the vision a wide range of traditional and innovative cuts will be offered along with information that illustrates the origin within the carcass and the craft behind preparing the product. The products will be complemented with extra recipes, cooking advice that support the customers maximise their experience of a quality product.
British breeds taste better
The co-op members raise native breeds cattle and sheep and beef dairy crosses. The native breeds of the british isles have a long history. The breed respresent and support a less intense agricultural practice and definately not suited to 'industrial' high input livestock systems.
Native breeds are able to achieve a finished quality on grass alone, producing marbled beef and therefore taste which has been linked back to herbage the livestock graze on.
All Meat prepared To Order
We are passionate about promoting our products. A core component of the objective is butchery and understanding of the skill and craft involved in deconstructing a carcass and transferring the primal cut in to a range of joint, steaks and other cuts which offer variety but also excellence in terms of taste, texture and overall flavour.
As co-op we are working closely with a small abattoir which offer bespoke service from slaughter to butchery. All animals are handled with respect and compassion derived from staff having many years of experience in what is an essential sector.
We follow seam butchery, described in greater detail here which ensures the products are comprised of uniform muscle sets, that in turn ensure the best possible presentation to the palate.
Having reared the best product and preparing the product with same attention. It is essential that the product be cooked to reflect the product origin within the carcass we therefore provide recipes and cooking advice.

As a co-op we, unlike other online butcheries, offer customers the chance to get to know the members/farmers, the breeds and livestock husbandary. The goal is to provide a direct conection to the provenace of the produce that the co-op offers.

directly supporting the farmer
Our members are small holders managing a small number of acres and therefore herds and flocks are not large. As a small holder and in particular a small holder that graze livestock exclusively on unimproved permanent pasture have limited revenue due to stocking rated and slow maturation of the breeds able to utilise the diverse herbage.
The goal of the co-op is to enure maximal financial return to the smallholder to support the sympathetic landscape management that enhance diversity and regeneration and the countryside for all to enjoy.
